White Chocolate Frosting

This was the frosting we created for my sister's wedding cake. It's also the basis for the frosting we use at work. I find Ghiradelli white chocolate works the best.

Chop in food processor:

  • 12oz White Chocolate

Pour into food processor while running, blend until smooth, scrapping sides as necessary

  • 3/8c cream, brought to boiling temperature
    • Let cool completely.

      Cream until smooth and fluffy:

      • 1c butter, unsalted
      • 2c powdered sugar

      With mixer on, add and beat until smooth and thick, scrapping sides as necessary:

      • Cooled chocolate mixture
      • 1t vanilla
