This was the frosting we created for my sister's wedding cake. It's also the basis for the frosting we use at work. I find Ghiradelli white chocolate works the best.
Chop in food processor:
Pour into food processor while running, blend until smooth, scrapping sides as necessary
- 3/8c cream, brought to boiling temperature
Let cool completely.
Cream until smooth and fluffy:
- 1c butter, unsalted
- 2c powdered sugar
With mixer on, add and beat until smooth and thick, scrapping sides as necessary:
- Cooled chocolate mixture
- 1t vanilla
