Butter Pecan Ice Cream

I created this for a co-worker who was leaving. I'd never heard of it before. It's pretty tasty.


In a small skillet, saute over medium heat until lightly browned:

  • 5/8c chopped, roasted pecans
  • 2T butter

Stir in a medium sauce pan, bring to a simmer, stirring occasionally until thick:

  • 1/2c brown sugar
  • 1/2c maple syrup
  • 2 eggs, beaten
  • 1 1/2c half-and-half

Remove from heat and add:

  • browned pecans
  • 1/2c cream
  • 1t vanilla

Let cool. Do the ice cream thing.
