I made this for a dinner with my friend's Frank and Robyn.
Four large servings in loaf pan
Mascarpone Mixture
In a small sauce pan, whisk together until well blended:
- 3 egg yolks
- 3/8c sugar
Whisk in and cook over medium heat, stirring constantly until mixture boils:
- 1/4c cream
- 1/8c Marsala wine
- 1/4t nutmeg
Boil gently 1 minute, remove from heat and refrigerate 1 hour.
Whisk in:
- 8oz mascarpone
Whipped Cream
Beat until stiff peaks form:
- 5/8c cream
- 1/4c powdered sugar
- 1/4t vanilla
Lady Fingers
13 total (bought or made)
In small bowl, combine:
- 1/2c espresso, cold
- 1/4c dark rum
When needed, soak/dip each lady finger in espresso mixture for a two seconds.
Arrange
You're making layers
- Arrange 6 soaked lady fingers in bottom of loaf pan (cut tips if needed)
- Spread 1/2 of mascarpone mixture over lady fingers
- Spread 1/2 of whipped cream in a layer
- Dust with cocoa
- Arrange 7 soaked lady fingers in the next layer
- Spread remaining mascarpone mixture over lady fingers
- Spread remaining whipped cream in a layer
- Dust with cocoa
- Sprinkle with grated bitter-sweet chocolate for decoration
Cover and refrigerate for 4 to 24 hours
