This was the filling in my sister's white wedding cake. Man, is it good. I could eat it by the spoonful.
Recipe
Yields: ~3 3/4c
Chop in food processor:
- 1/4# milk chocolate (Ghirardelli recommended)
Pour into processor while running:
- 1/4c hot brewed espresso
Scrape sides, add and blend until smooth:
- 1/8c cream
- 1T Kaluha
Let cool completely.
Separately, cream until smooth and fluffy:
- 1c butter, unsalted
- 2c powdered sugar
Then add cooled chocolate mixture and beat until smooth and thick, scrapping sides as necessary.
