Peanut sauce "anything" is my favorite Thai dish. You can judge a Thai food restaurant on their sauce alone. Unfortunately, they're usually bland and watery. Not this one.
Serves 2 people as a main dish or 4 as a satay. Try over spinach and tofu.
Recipe
Saute the following in a small amount of peanut oil for a 2-3 minutes:
- 1T minced lemon grass
- 1/8c minced onions
- 3 cloves garlic, minced
- 1 kaffir lime leaves, roughed up
Then add and simmer for 5 minutes:
- 1/2c coconut milk
Then add and mash up until incorporated:
- 1t red curry paste
Then add the following and stir:
- 1t fish sauce
- 3T brown sugar
- 1/4c soup stock
Then add the following and low simmer until thick and tasty:
- 1/2c roasted unsalted peanuts, ground finely
When done, remove from heat and add:
- 2T tamarind concentrate
Remove lime leaf and serve.
