Oreo Cheesecake
Delicious. Although, this might be a friends, ex-girlfriend's mother's. I really can't remember. Although I never made this with a water bath, it probably wouldn't hurt.
Recipe
Crust
Mix together:
- 2c Oreo crumbs, sorta fine
- 1 stick unsalted butter, melted
- 6T sugar
Cover bottom of 9" or 10" cheese cake pan about 1" up the sides.
Bake crust at 375° for 5 minutes.
Filling
Beat until very smooth:
- 3 packages cream cheese (24 oz) at room temperature
- 1 1/4c sugar
Beat in half at a time:
- 4 eggs
Beat in:
- 1/2c sour cream
- 2t vanilla
Gently fold in:
- 14 Oreo's gently broken up
Pour into crust.
Bake 45-50 minutes at 325°.
Let cool for 15 minutes and then refrigerate overnight.
Optional: frost top with whipped cream.
